First Bhains Ka Paaye after Ammi

Well i really don't know what is a bhains(بھینس) called in english because a cow that gives milk is called gaay (گائے )and its meat is called barey ka gosht ( بڑے کا گوشت )....a bhains is even bigger and better than a cow it gives more milk and its a mammal maybe its a she Bull (بیل) or Irish Bha whatever....
The Reason it is a big event in my life after Ammi is because both my parents were very fond of this dish. it is very tasty gives warmth in the cold weather and a little hard to cook ...there is a  very common urdu proverb KYA PAAYE PAKA RAHEY HO... ? کیا  پاۓ  پکا  رہے  ہو ) refering to any inordinate delay with a little sarcasm.
Usually Paaye is a seperate dish and Nihari of the shank bone is a seperate one....but my parents God bless their souls and May they rest in peace were good shepherds infact very good shepherds.... most people from their herd considered trotters very insignificant food ... hain paay main khaney ka kya hota hai ?( What is there to eat in a Trotter ? )  or hain sirf paaye....? ( Only Trotters ? ) so they thought that when they are taking the trouble of cooking  paaye all night long ....bongh nihari could be cooked with it....i don't remember Papa ever brought Paaye without bongh . He did not like the nihari with atta or flour ...so it was ok to serve both dishes mixed togather.... the stickiness of paaye and the hot spicy taste of nihari , the softness of bone marrow and the tender loving and caring of the Papa and Ammi ....is so hard to replace or recreate.


How much i wish tonight there was a way both of them could see me enjoying this feast ....especially Ammi who thought i'd lose it after her and nobody will care....

    so now i get it ... Bhains or بھینس = Buffalo
